Apricot muesli and sesame balls

13935270135_835d215136Looking for a tasty snack that fills you up, is super easy to carry with you for eating on the go, has no added sugar (it doesn’t need it!) and is great for before or after a workout? Well here it is!

With the apricots being gently stewed with all the beautiful spices, and a silky smooth consistency, these aren’t your regular thrown together bliss balls.

Plus, there isn’t much in this world that doesn’t taste better rolled in sesame seeds!


Serving size: Makes 10 balls


Ingredients

70g dried apricots, roughly chopped
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground cardamom
15 g sesame seeds for coating
1 cup natural muesli
1/4 cup water


Method

1: Add muesli to a food processor and blend until the consistency is close to powder form.
2: In a small saucepan simmer the apricots with the water, cinnamon, nutmeg and cardamom for 12-15 mins until the apricots are soft.
3: Cool the apricot mixture until at room temperature, then add to the muesli and mix to combine.
4: Using your hands, roll the mixture into ten balls and then roll them in sesame seeds to coat. You can add a little more water or muesli if the consistency seems too dry or moist.
