There’s something about the combination of the natural sweetness of the fruit contrasting with the more earthy flavours of the kale, vinegar, and chilli that makes this a recipe to remember.

4 cups chopped kale leaves
1 tbsp sesame oil
1 tsp honey
2 tbsp rice wine vinegar
Salt and pepper to season
1/4 tsp chilli flakes
1 cup chopped mango
1/2 cup blueberries
2 tbsp sliced almonds
1: In a large bowl, toss the kale with 1/2 tbsp sesame oil, and then massage into the leaves to soften.
2: Mix together vinegar, salt, pepper, 1/2 tbsp sesame oil, honey, and chilli flakes. Pou this dressing over the kale, and then toss through fruit and almond slices.
