This weight loss recipe is a salad bowl that is packed full of important nutrients and low GI ingredients.
The dressing uses the freshest ingredients that compliment each other beautifully and transform this salad from a side dish to a complete meal in its own right.

Ingredients
1 zucchini, sliced into spirals
1/2 cup cooked quinoa
5 cherry tomatoes, halved
1 cup baby rocket leaves
1 tbsp pepitas
1 tbsp desiccated coconut
1/4 yellow capsicum, sliced into strips
1/4 red capsicum, sliced into strips
Dressing:
1 clove garlic, roughly chopped
1 red chilli, roughly chopped
Zest and juice from 1/2 lemon
1 tablespoon extra virgin olive oil
2 tabslespoons fresh chopped mint
1 tbsp natural yoghurt
Method
1: Prepare salad ingredients, toss together in a large bowl and top with pepitas, quinoa, and coconut.
2: Blend together ingredients for the dressing, and either set aside in a small container for later, or drizzle over salad contents to enjoy immediately.
